Squash

CONFECTION

Sweet, dry, long storage. Attractive, smooth, grey, flattened, avg. 3-5 lb. buttercup-size fruits. While the taste can be very dry just after harvest, a few weeks of curing in storage results in outstanding sweetness and texture.

DELICATA

Unique cream-colored fruits with dark green longitudinal stripes and flecks. Very sweet, excellent for stuffing and baking, even right after harvest, requiring no curing.

SUNSHINE

Stunning, scarlet fruit. Beautifully tender flesh is smooth, sweet, and bright orange for baking, mashing, and pies. Sunshine is destined to become a recognized, one- variety squash genre in the market. The orange kabocha squash

CARNIVAL

Multicolor Sweet Dumpling. About 1 1/2 times the size of Sweet Dumpling, with colorful patches and flecks of dark green, light green, orange, and yellow. Popular specialty market variety but not as good eating as Sweet Dumpling.

BUTTERCUP

Dark green, blocky, with a gray "button" on the blossom end. The medium- small, 3-5 lb., fruits have deep orange, fiberless flesh with a rich, sweet flavor. A northern New England favorite.

BUTTERNUT

The standard butternut. Light tan-colored winter squash with small seed cavities and thick, cylindrical necks without crooks. The flesh is smooth-textured and has a unique sweet flavor, particularly after 2 months’ storage.

RED KURI

Flashy, scarlet fruits. Teardrop-shaped, "baby red Hubbard" style fruits and have smooth-textured flesh. Red Kuri is good for pies and purées because specks of skin (being red) will not show. Also known as Orange Hokkaido.

SPAGHETTI SQUASH

Yellow, spaghetti-like flesh. Skin is ivory changing to pale yellow at maturity. Bake like squash or boil and fork out the flesh, topping the "spaghetti" with your favorite sauce.

SUGAR LOAF

High sugar content and thick flesh make this a superior storage squash at room temperatures, but sugar content increases at lower temperatures. A Klippers favorite!!

TABLE ACE

The standard acorn variety. The taste is fairly good, nutty, and moderately sweet.

BLACK FORREST

Smaller size kabocha. Black Forest’s dark green, flat-round fruits are of the kabocha type, but a bit smaller, The deep orange flesh is medium dry and sweet.

SWEET DUMPLING

Sweet, single-serving size. Small, 4" diameter, teacup-shaped fruits average 3/4-1 lb. It has the ivory color and dark green stripes of Delicata, but in a round, flat-topped shape and dainty, single-serving size. Very sweet, tender orange flesh. Suitable for stuffing.

FESTIVAL

This new winter squash combines the superior sweet-flavoured flesh of a Delicata with the shape of a blocky acorn. Skin has bright white and green markings with orange background stripes. Each weighs 1-1.3kg (2-21/2lb). Stores for 3 months. Also great for fall decorations.

SWEET MEAT

Large, grey, hard-skinned squash 4.5-7kg (10-15 lbs) grow on a big sprawling vine. They have excellent tasting, fiberless, orange flesh protected by a thick skin for long storage

TURK'S TURBAN

Excellent for baking and stuffing, the bright red, white and green squashes also look stunning in fall displays as decorative gourds or on the market table.

BABY BLUE HUBBARD

hubbard-shaped squashes that have orange flesh and keep well. An attractive, slate blue, flavourful variety for gardeners and commercial growers.

GREEN HUBBARD

12-inch by 9-inch, 10- to 12-pound tapered fruits with dark, bronze-green skin and a hard, tough rind and fine-grained, dry, orange-yellow fruit. Exceptional winter keeper.
